We dropped by Kanbe Ramen during the holidays, expecting the usual long queues this place is known for, but surprisingly, it was the complete opposite. No crowd, no waiting. We walked right in, were greeted almost immediately, and got seated without any fuss. Honestly, that alone already felt like a win.

The Ordering Experience

As you flip through the menu, one thing stands out: they keep it very authentically Japanese. Instead of just telling the staff what you want, you fill in a handwritten order slip, choosing everything from noodle texture, soft to extra hard, spice level, soup richness, to extras like kaedama, seaweed, and more.

It’s a small detail, but it adds that “this feels like Japan” touch that ramen lovers will appreciate.

10-Piece Gyoza

We started with the 10-piece gyoza, and while the texture was nicely done, crispy on the outside and juicy inside, the flavor leaned a bit off balance for me.

The ginger was quite strong, almost overpowering the rest of the filling. Instead of complementing the meat, it kind of took over the whole bite. If you’re a big fan of ginger, you might enjoy it more, but personally, it felt a little too heavy.

Kuro Ramen (Black Garlic Oil)

Then came the Kuro ramen, rich tonkotsu broth infused with black garlic oil.

The broth had that creamy depth you’d expect, with a nice garlicky punch. The noodles were cooked to our chosen texture, and overall, it was a solid bowl, satisfying, flavorful, and comforting.

That said, if I’m being completely honest, I still prefer the Kuro version at Ippudo. It just feels more balanced and refined in comparison, especially in how the garlic blends with the broth instead of sitting on top of it.

Service

Service was okay. Nothing bad, nothing particularly memorable either. The staff were efficient enough, got us seated quickly, and the food came out at a reasonable pace. It did the job, just without that extra warmth or attentiveness.

Experience: 8 / 10, boosted by the no-queue holiday timing
Service: 6.5 / 10

Kanbe delivers a solid, authentic ramen experience, especially with its customizable ordering style and rich broth. It’s definitely worth trying if you’re nearby in Desa Park City.

But for me, when it comes to that Kuro ramen craving, Ippudo still takes the crown.
